WHere is an easy interpretation of a cocktail found on the seasonal drinks list. This is a batch premix that is loaded with the flavours of a holiday season, making it ideal for your festive gathering. Save the extra citrus syrup for brunch beverages, sweets, or to mix another batch of bikinis.
Bikini Recipe
Serves 10 guests
For the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Cocktail (produces 850ml, to serve 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing
Method
Making the Cordial: Combine the listed ingredients inside a pan, heat until it reaches a gentle boil, stirring to dissolve. Next, turn off the burner and leave to cool completely. Pour into a sterilised bottle, cap it and refrigerate it in the refrigerator, it can be stored for about a month.
For the Cocktail Base: Pour all the liquids into a sizeable container, allow it to infuse for one hour, then filter it , ideally through cheesecloth, so it's fully clarified.
For serving: Add 85ml of your cocktail base to a mixing glass containing ice, gently stirring lightly for a minute to cool it down. Pour into an chilled martini glass or a similar vessel, top with a few cranberries and complete it by giving it a light spray with the mandarin essence over the top.
